Hermitage

A true farming family, Domaine du Colombier has grown not only grapes but a variety of fruits for generations.  Until 1991 all of the estate grapes were sold to a variety of top producers in the Northern Rhone such as Guigal (Hermitage), Ogier (Crozes-Hermitage) and white grapes going to Paul Jaboulet Aîné.

Wine growing is now in the hands of Florent Viale whom continues to have a pragmatic approach to farming that is respectful of the land and results in very healthy, clean fruit.  Rather than chasing trends, Florent understands that he is in possesion of something special and aims to maintain and gently refine what is a proven successful tradition.  WIth such excellent fruit there is no need to use any overt manipulation. Whole cluster Syrah is still stomped by foot rather than use of mechanical equipment so Florent gets a direct feel for the vintage before guiding it through  élevage.  Fermentations are carried out slowly and under relatively cool temperatures so that freshness and purity of fruit is maintained.  The Crozes is matured in a variety of vessels for roughly 14 months.  About half is done in demi-muid and the remainder in steel and/or enamel vats.
