Guaranteed to bring a smile to your face and leave a rosy tint in your glasses. Coming from the obscure mountainous region of Bugey not far from the Jura and Savoie in eastern France, the Lingot Martin Cerdon is nothing but a pleasure to knock back at any time. Made with 50% Gamay for fruity fun and 50% Poulsard which lends a perfect balance of earthy and herbal notes to the fruitiness of the gamay. The pink color adds to the festive nature of this 8% ABV sparkling quaffer that is made off dry. Of the few Cerdons available in the US, the Lingot Martin is one of the drier ones. It has wonderful crisp acidity so even though it's slightly sweet, it's a very refreshing drink that pairs well with more foods than one might imagine. Cured meats, dry white meat such as turkey, cheese, many Asian dishes, etc. will pair extremely well.
The carbonation is produced using a technique called the method ancestrale. This ancient method dates back to the 1500s in the town of Limoux where sparkling wines were first produced. This is a process where a wine is capped off before fermentation is complete leaving no room for the gas emitted from the fermentation process to go but back into the wine itself. When the oxygen in the container runs out, fermentation is naturally halted and any unconverted sugar at this point will be left in the wine.
